Bush's Black Bean & Mango Salad

My sister found this recipe on a can of Bush's black beans and it is awesome! It is also extremely forgiving if you want to omit an ingredient or substitute whatever you have 'on hand'.
Bush's Black Bean and Mango Salad
1 can black beans, drained and rinsed
2 cups diced mango
1 cup diced sweet red pepper
6 green onions, thinly sliced
1/4 cup fresh lime juice
1/4 cup chopped cilantro
1 tbs. olive oil
1 seeded jalapeno, minced
salt to taste
Combine ingredients in bowl and toss to serve.
I made it for lunch today. yum! (lucygoose, might this be gluten-free?)
Subs:
- I used canned papaya, rather than mango -- both are great. My sister says it's also good w/ canned tropical fruit mix
- I have omitted the cilantro and it's still great.
- I've used both fresh and pickled jalapenos (yeah!) and I prefer the latter.
- you can sub green pepper for red, etc.
- rather than lime juice, I've made it w/ lemon juice and also made it w/ balsamic vinegar. All are good.
Can you tell that I love this stuff?! lol!
