If you have extra zucchini this time of year, here's a yummy way to use some of it. A nice change from zucchini bread.
CHOCOLATE CHIP ZUCCHINI COOKIES
CREAM: 3/4 c. shortening, 2 c. sugar
ADD: 2 eggs and mix well
ADD AND MIX:
3 3/4 c. flour
1 tsp. baking soda
1 tsp. salt
2 c. grated zucchini
BY HAND MIX IN: 1 bag chocolate chips
Drop by spoonful on cookie sheet. Bake at 350 degrees for 10 to 12 minutes. Let cool on cookie sheet.
I sometimes need to add more flour to make up for the moistness of the zucchini. Adding an additional cup of flour will give you a very cake-like cookie. I usually need to go the full 12 mins when baking.
I am just finishing up a batch I made tonight. I think I've eaten five cookies already. The rest are going to work tomorrow for food day.
