I have an urge to make these, but never have before. Who out there has a tried and true recipe for the perfect sauerkraut ball?

NTH-NM, I like sauerkraut but had never heard of sauerkraut ball until I read your thread. Then a few days ago I was at Barnes & Noble looking at recipe books . . . and what should I see but Sauerkraut Balls!! It was in David Letterman's mom's new cookbook and there was a picture of her and her DD holding a plate of sauerkraut balls!!! It made me laugh and think of this thread -- Sauerkraut Balls!??!!! . . . twice in one week! :lol: :lol:

Isn't that just the way of it? :lol: I think sauerkraut balls must be a staple around here, cuz I see them everywhere. A lot of restaurants carry them on their appetizer menus.
And now it two years later from when I first posted the original post, so I'm wondering if you have run across them again? :???:

Hi Joan,

I saw this post today for the first time. I don't like the smell of sauerkraut and I honsestly don't remember ever tasting it. :P I think I'm the oddball in my family. However, I googled for a recipe and this was the first of the results. :D

OMG I LOVE Sauerkraut Balls! the crispier the outside the better!

This is the recipe I used last time and it is pretty good. Be sure you drain the sauerkraut really well or they won't hold their shape. BTW, I think I left out the coned beef last time and used all ham.

Sauerkraut Balls

3 tablespoons unsalted butter
1 onion, finely chopped
1 cup finely chopped cooked ham
1 cup finely chopped corned beef
1/2 clove garlic, crushed
6 tablespoons all-purpose flour
2 cups sauerkraut, drained
and minced
1 tablespoon chopped fresh parsley
1/2 cup beef broth

1 egg
2 cups milk
2 1/2 cups all-purpose flour
4 cups fine dry bread crumbs
1 quart oil for frying



In a large skillet, melt butter over medium-low heat.
Add onion and cook until softened. Stir in ham, corned
beef and garlic. Cook mixture, stirring constantly for 1 minute. Stir in 6 tablespoons flour and cook mixture over moderate heat, stirring occasionally, for 3 minutes.

Stir in sauerkraut, parsley, and broth; cook for 3 minutes or until thickened and paste-like. Spread mixture on a platter or cookie sheet and chill for at least 3 hours.

Heat oil in deep-fryer or electric frying pan to 375 degrees. In a bowl, whisk together the egg, milk and 2 1/2 cups flour. Shape the sauerkraut mixture by level teaspoons in to balls, dip them into the egg mixture and roll them in the bread crumbs.

Fry balls in batches for 2 to 3 minutes or until golden
brown. Transfer to paper towels to drain. Serve warm.

And if you are a sauerkraut fan this is another favorite. We like this for snowy Sunday afternoons - goes great with a good beer and football!

Reuben Casserole

6 slices rye bread, cubed
1 (16 ounce) can sauerkraut,
drained and rinsed
1 pound deli sliced corned
beef, cut into strips
3/4 cup Russian-style salad dressing
2 cups shredded Swiss cheese

Directions
1 Preheat oven to 400 degrees F (200 degrees C).
2 Spread bread cubes in the bottom of a 9x13 inch baking
dish. Spread sauerkraut evenly over the bread cubes, then
layer beef strips over sauerkraut. Pour dressing over all.
3 Spray aluminum foil with cooking spray and use to cover
baking dish, sprayed side down. Bake in the preheated oven
for 20 minutes.
4 Remove cover, sprinkle with cheese and bake uncovered
for another 10 minutes, or until cheese is melted and bubbly.

You guys are making my mouth water with these recipes! I use to hate sauerkraut ,but love it now. Thanks for sharing these. I'm going to a function soon where I need to take an appetizer, so I might just make sauerkraut balls! :D

Caliloo, that Reuben Casserole sounds good!! I'll have to give it a try when my sister comes down this weekend. Others in the family aren't such big fans of 'kraut!! :lol:
