Copper Pennies

My mom makes these, and I finally made them for myself yesterday.....Good to put in our lunches with a sandwich...and easy to make....

Copper Pennies

2lbs carrots peeled/sliced
cook till almost done....I steamed mine.....mom boils hers

While the carrots are cooking...
1 1/2 green pepper chopped..........Put these in a bowl
6-7 green onions sliced

In a sauce pan bring to boil and pour over cooked carrots and onions, green pepper...

3/4 cup sugar
1/2 cup cooking oil
1 can condensed tomato soup
2 Tablespoons horseradish mustard
Salt and pepper to taste.....(I just used pepper)

Refridgerate.......Freezes well, too
