Seeing Jane's zucchini pie, and I DO mean to try it, made me think of telling you all how, we have been eating the zucchini. It is easy, and you all might even already do it this way, but ya never know.....I can eat it till I am almost sick.....
Now I just kinda guessed on amounts, but I used...
2 small'ish yellow squash
about 4 zucchini's couple good thick slices of onion
2 good sized garlic cloves put through the garlic press
Put all that in a big frying pan and pour some olive oil over it, oh I don't know, maybe 1/4 cup/less maybe? And half a stick of margarine/butter. Let that cook awhile till it's soft , then pour over a big can of stewed tomatoes. Cook a bit, maybe 15 min, and it's done.....
Salt and pepper to taste
