Yep - just what it sounds like. This is very good as a vegetarian main dish or as a starch/veg side.

MUSHROOM PIE

2 Pie crusts for a 9” pie plate

3 TBSP Butter
16 oz mushrooms, sliced
1-2 ribs celery, chopped
1/2 cup onion, chopped
1 can cream of mushroom soup
1 cup walnuts, chopped
salt
pepper

Melt butter in a large sauté pan. Saute onions and celery over med heat until they begin to soften. Add mushrooms and continue to sauté until the mushroom liquid evaporates. Add cream of mushroom soup and heat through. Add walnuts and remove from heat.

Put bottom crust in a 9”pie plate. Add mushroom mixture. Put top crust on, crimp edges, cut vents for steam. Make at 350 for 35 – 45 min until crust is golden brown and filling is bubbly.

NOTE: I sometimes put a layer of sliced hard boiled eggs in the bottom before I add the mushroom mixture. It keeps the bottom crust from getting soggy.
