I always thought that was a crappy sounding name, but that IS what it's called. :lol: It's really used as a bean dip with those cupped shaped tortilla chips. I have made this several times and lots of people find it kind of addicting. I took it to the Hallson Gathering we just had and several people loved it and wanted the recipe, so here it is:

1-16 oz. can of black beans (drained and rinsed)
1-16 oz. can of pinto beans (drained and rinsed)
1-16 oz. can of black eyed peas (drained and rinsed)
1-4 oz. can of sliced water chestnuts (drained and rinsed)
1-15oz. can of yellow niblets corn (drained and rinsed)
1-15 oz. can of white shoepeg corn (drained and rinsed)
1 cup of Medium hot Pace Picante Salsa
1 cup of French or Catalina Dressing
2 bunches of green onions, chopped
5 medium hot peppers, chopped

Just combine all ingredients. This can be hot or cold.
I have always had it cold and you can alter the recipe any way you want. Any combination of three different beans is fine. More of this or less of that is okay too. And, if you use lo-fat or fat free dressing I am told that it can be used as a weight watchers recipe.
My DD and I don't care for spicy foods so I always use Mild salsa and only a couple hot peppers and then a few milder ones. Make it as hot as you like.

It is one of the easiest things to make for a large gathering! :wink:

Thanks for posting the recipe Joan. :D I would have been requesting it if you hadn't. This is not something that usually appeals to me but it is delicious!!!

This sounds great!

We are hosting a pre-season football gathering here in 2 weeks, this is going on the menu.

I really think Catalina dressing is one of theose under appreciated *mystery* ingredients. I make a Frito Salad that uses Catalina and everyone loves that too, but can never guess what makes it taste "just right".

I use Catalina dressing in that Dorito Taco salad too and just love it! There is also a recipe that my ex-coworker gave me that used Catalina dressing and once it was all cooked it tasted like a sweet barbecue sauce. Very yummy! Wonder what I did with that recipe. It was another one that was super easy and all done in one baking dish with chicken and long grain rice. Hmmmmmm

I made this again this past Sat for an early Mardi Gras party - was a total hit again.
