I found a recipe to use my extra tomatoes and zucchini. Very easy and very fresh-tasting and delicious.

Tomato-Zucchini Summer Dish

You need sliced tomatoes, sliced zucchini, and some sliced onion. In the bottom of a 2-qt casserole dish, put a layer of zucchini slices, then a layer of tomatoes, then some onions. Sprinkle with some herbs or seasonings and a little shredded cheese (I use mozzarella). Make another layer of zucchini, tomato, onion, herbs and cheese. Now make one more layer of zucchini, tomato, onion/seasonings. Now on top add a little cooked, crumbled bacon or sausage, or a cooked, chopped chicken breast, or some other meat topping, then top with more cheese.

Bake at 350 for 45 mins to an hour.

Since it's mostly cooked vegetables, this dish tastes surprising light and fresh.
