Zucchini Pie

My SIL made this at Thanksgiving and everyone loved it....including me.


4 cups thinly sliced unpeeled zucchini
1 cup chopped onion
1/2 cup margarine
1/2 tsp. salt
1/2 tsp pepper
1/4 tsp garlic powder
1/2 tsp Italian seasoning
2 eggs well beaten
8 oz. mozzarella cheese shredded
8 oz. cheddar cheese shredded
8 oz. package crescent rolls

Heat oven to 375 degrees. In 10 inch skillet, cook zucchini and onion until tender (about 10 min.) Stir in seasonings.

In large bowl, blend eggs then add both cheeses...stir well. Stir in vegetable mixture. Separate crescent dough into 8 triangles and place in ungreased pie plate. Press out until smooth, then pour vegetable mixture evenly into crust.

Bake at 375 for 18-20 minutes or until knife comes out clean.

Let stand 10 minutes or so before serving.

I will have to give this a try. With all that cheese it can't be anything but good :D thanks for sharing......jackie
