So I have a bizzilion gazillion tomatos! I want to make a simple salsa.
I hate the stuff but hubby loves it, enough to eat it with a spoon EWWWW
But I have no idea how LOL! Not much of a cook here hehe.

Anyone got any tips on making it? Simple please :-?

Thanks :-)

Super, super easy! Chop up tomatoes, add some diced onion, add some finely diced peppers (adjust here to suit your taste, I like mild so I do bell, sweet banana, and just a little bit of jalepeno). Salt, pepper, cilantro if you have it. Eat fresh.

I also can it, same ingredients plus some vinegar and a little sugar. Cook it all together, put into hot, sterile jars, seal and hot water bath process.

Check out the extension web sites, they have good info for using your garden bounty.

Here is the U of I site, from here select "Tomatoes" then scroll down for fresh salsa recipe . . .

It's a great site for all sorts of information on vegetables.

This is the BEST salsa I have ever had, bar none. The recipe comes from a friend who is an amazing resource for anything you can put in a jar....

Give it a try, you will not be disappointed.

ANNIES SALSA
8 cups tomatoes, peeled, chopped and drained
2 1/2 cups chopped onion
1 1/2 cups chopped green pepper
3 - 5 chopped jalapenos
6 cloves minced garlic
2 tsp cumin
2 tsp pepper
1/8 cup canning salt
1/4 cup chopped fresh cilantro
1/3 cup sugar
1/3 cup vinegar
16 oz. can tomato sauce
16 oz can tomato paste

Mix all ingredients, bring to a boil, boil 10 minutes. Pour into hot jars, process at 10 lbs of pressure for 30 minutes for pints.
Makes 6 pints

For BWB, increase the vinegar to 1 cup, no other changes. Process 15 minutes for pints and 20 minutes for quarts.

@caliloo:

I just made a batch exactly as your post said, and I am amazed.

That is probably the best salsa I have every tried also.

I didn't notice this recipe when it was originally posted but I think it sounds like one I need to try this year! Just a question, maybe I missed something... what is "BWB"?
Thanks. Jeanne
