Hallson Gardens

Cold Corn Salad:

1 can corn (sweet) drained
1 can shoepeg or mexican corn (drained) (corn w/green and red peppers and beans, same aisle probably)
1/2 cup red onion (or white) chopped
1/2 cup mayo (light if you prefer)
1/2 cup green pepper (chopped)
1 cup shredded cheddar

Mix all together in bowl.
Just before serving mix with about 1 cup crunched up Frito Chili Chips

I'm almost embarrassed about how easy it was to make.

It's been at least a couple weeks since I've made some - sounds like a plan for tomorrow. Then again, any excuse to buy some Frito chips is a good one to me. Whatever will I do with the leftover chip????
