Hi Everyone,
If you have a recipe for a pasta salad that you really like, please share. I have a 14yr old son who tells me, "I'm growing, and need to be able to eat whenever I want to". Yes, he is right. He's not a picky eater at all. He likes all fruits and all veggies. He also like pasta salads. I'm thinking if I make up batches of pasta salads to keep in the fridge, he can munch on them between meals. He really loves healthier foods, and isn't too excited about snacking on junk food regularly, and I'd prefer he'd eat healthy too.
So please share if you have a recipe, that you've tried and really like.
Thanks tons! :)

Hi Sunpower1,

This is a favorite of mine, it's a little different. See what you think.

I enjoy making variations of this recipe:

The best thing I like about this one is adding frozen peas (I use 1/3 cup, rinsed in hot water to thaw first) to the noodles about half way through their cooking time. It just turns out better for some reason, and I'm not a fan of peas normally. I also use 8 oz of large elbow macaroni, skip the relish, don't worry about the lemon juice, and I usually skip the cheddar cheese. I substitute 1/4 cup diced red bell peppers for half the celery, so I use 1/4 cup diced red bell peppers, 1/4 cup celery, and 1/4 cup onion. I also only use one small can (5 oz) of tuna. Unfortunately the last time I made this I used Starkist and it was the nastiest can of tuna I've ever had, complete with some kind of slimy brown tuna meat and some bones, so make sure you use a better tuna. Chicken of the Sea is my preference, though even generic tuna around here is usually better than Starkist.

This is so simple that even your son could make it on his own, and it is very inexpensive. When I make this it tends to be its own meal :)

Hope it helps!

Chris
