Leftover Turkey Suggestions!

I thought someone might find this handy in the next week or so :D PLease feel free to add more suggestions - I would love some more ideas too!

Turkey Tetrazzini

8 oz. spaghetti
1 tablespoon butter or margarine
1 medium onion, finely chopped
½# fresh mushrooms, sliced
½ medium red pepper, finely chopped
½ medium green pepper, finely chopped
¼ cup flour
15 oz. low-fat chicken broth
12 oz. evaporated fat-free milk
3 oz. fat-free or low-fat cream cheese
¼ cup Parmesan cheese, divided
¼ dry sherry wine
¼ teaspoon white pepper
½ teaspoon salt
1# turkey, cut in ½-inch pieces
¼ cup fat-free milk, optional

Preheat oven to 325 degrees. Grease a 2-quart baking pan. In a large saucepan, cook spaghetti in lightly salted boiling water until just tender. Drain well and set aside. In a medium skillet, heat butter over medium heat. Cook onions until translucent. Add mushrooms and peppers and cook until tender.

In a shaker, mix flour with broth until smooth. Add broth and evaporated milk to the pan. Cook over medium heat, stirring constantly until mixture thickens. Stir in cream cheese, 2T. Parmesan cheese, sherry, white pepper, salt and turkey. If mixture is too thick, add milk to thin. Stir in spaghetti. Spoon mixture into baking dish. Top with 2 tablespoons Parmesan cheese. Bake for 20-30 minutes or until heated through.

Diane Sawyer's Turkey Hash
• 1 tablespoon of olive oil
• 1 cup of diced red pepper
• 1 cup of diced yellow onion
• 1/2 pound of Italian sausage (sweet or hot) our of the casing
• 1 pound of turkey and shredded turkey
• 2 cups of stuffing
• 1 cup gravy
• 1 tablespoon of olive oil
• 1 tablespoon of butter
In a medium-sized skillet over medium high heat sauté the red pepper and onion in one tablespoon of oil until it begins to turn golden brown, 3-5 minutes. Place into a large bowl. In another skillet sauté the sausage over medium high heat until it browns and is no longer pink. This should take 5-7 minutes. Add this to the large bowl with the peppers and onions.
Add the shredded turkey, the stuffing and enough gravy to moisten the mixture to the sausage. In a medium nonstick skillet over medium heat add half of the remaining butter and olive oil. Add half of the turkey mixture and press down with a metal spatula a bit.
When the mixture turns brown on the bottom, start turning the hash until there are lots of crispy bits. This takes 3-5 minutes on each side. The mixture will be loose. Place on a serving platter. Repeat with remaining ingredients. Serve with cranberry sauce on the side and a sunny side up egg on top. Serves 4-6.

Turkey Enchiladas

2 cups leftover shredded turkey
1 large jar salsa
1 cup canned black beans, drained and rinsed
2 scallions sliced
6 flour tortillas
3 cups grated Pepper Jack cheese

Preheat oven to 350 degrees. In a large bowl combine turkey with 2/3 cup salsa, black beans and scallions. Spread out some salsa in bottom of baking dish. Place about 1/2 cup of turkey mixture And a bit of cheese on a flour tortilla, roll up and place in baking dish and continue process. Top with salsa and sprinkle with remaining cheese. Bake for 30 minutes or until bubbly

White Chicken Chili
Also good with turkey.

Servings: 4

Ingredients:
1 tablespoon vegetable oil
1 onion, chopped
3 cloves garlic, crushed
1 (4 ounce) can diced jalapeno peppers
1 (4 ounce) can chopped green chile peppers
2 teaspoons ground cumin
1 teaspoon dried oregano
1 teaspoon ground cayenne pepper
2 (10.5 ounce) cans chicken broth
3 cups chopped cooked chicken breast
3 (15 ounce) cans white beans
1 cup shredded Monterey Jack cheese


Directions:
1. Heat the oil in a large saucepan over medium-low heat. Slowly cook and stir the onion until tender. Mix in the garlic, jalapeno, green chile peppers, cumin, oregano and cayenne. Continue to cook and stir the mixture until tender, about 3 minutes. Mix in the chicken broth, chicken and white beans. Simmer 15 minutes, stirring occasionally.
2. Remove the mixture from heat. Slowly stir in the cheese until melted. Serve warm.

My favorite way to enjoy turkey leftovers goes something like this . . . (works best early morning, late night, or between meals)

1) Take the tupperware container with leftovers out of the frig. Hold the container against your body as you peel off the lid.

2) Using your fingers, pick out the 'best' pieces (hey, if you don't eat them someone else will) and eat them while standing in the kitchen.

3) When you are finished or in fear of getting caught, put the lid back on the container and put it back in the frig. Lick all evidence from your fingers.

YUM-YUM-YUM!!!!! Now I'm getting hungry for turkey leftovers!!
