I need easy low carb recipes

My hubby's blood sugar was elevated at his last check-up so he's been trying to cut his carbs and lose a few pounds. He hasn't been diagnosed as diabetic yet and trying to watch what he eats so he can put that off as long as he can. Anyone have any ideas?

Hi Christie. Sorry to hear that your hubby's health is in question. I don't have any personal experience with diabetic diets but a quick google search for "low carb diabetic recipes" gave a good return. Here's a site that looks pretty promising.

There is no such thing as a Diabetic Diet. The key is to eat consistent carbs, not necessarily low carbs. The Atkins diet is not the way to go, imnsho. Too much fat and not well balanced at all. Carbs are NOT the enemy for anyone, especially diabetics. Here's some nutrition info from the Joslin site. http://www.joslin.org/managing_your_diabetes_709.asp It's all in carb counting and it's terribly easy after only a few tries. The Joslin Diabetes Clinic is the leading diabetes center in the country and they do a great job with education on all aspects and all stages of diabetes. Explore their whole website, not just the pages I linked to here and in your other thread, you won't regret it, I promise.
