Crockpot Breakfast

I got this in an e-mail from a Pampered Chief friend...I have not tried it yet, but doesn't it sound good?

Crockpot Breakfast Strata –A new Christmas morning tradition—SO EASY!!!

Load up the crockpot the night before and wake up to an easy breakfast.

12 eggs
1 cup milk
1/2 teaspoon dry mustard
salt and pepper
1 lb bacon, cut into small pieces -cooked and drained
1 (32 ounce) bag frozen hash brown potatoes
1/2 cup onions, diced
3/4 lb shredded cheddar cheese
Layer the ingredients in your crockpot in this order.
1/2 of the potatoes- on the bottom.
1/2 of the bacon.
1/2 of the onions.
1/2 of the cheese.
potatoes.
bacon.
onions.
cheese.

Beat the eggs, milk, mustard, salt and pepper together. Pour this over the
whole mixture. Cook on low for 10 to 12 hours. 10 servings

I add green peppers to everything, much to our grown son's chagrin! :lol: I love to make stuffed peppers.

I bet you could cut it in half Ed.....Plus, I bet it says 10 people and it's really more like 5-6.. :snow:

Some of the ladies where I work make this for Birthdays, special treats etc for their morning break. (They have tripled the recipe and use an electric roaster) I have been invited to share :wink: and have to say that this is quite good. :P It is Easy they start the roaster at about 300 and when it gets good and hot turn it down low and stir when needed. It is done in a couple hours this way. The eggs set up and hash browns are heated through. (they let the hash browns unthaw a little in the refrigerator to speed up the cooking time)
They use the throw away liners they have now for the roaster pan makes clean up a breeze. 8-)
Would make a good brunch dish!

I was too tired to make this last night but it's in the crock pot now. 8-) I substituted ham for the bacon. Did anyone else make it?

Shoot....I forgot.....Well now with all this food in the fridge, it will have to wait for next week.....

It smelled great this morning! 8-) It was good but didn't taste like I expected. I think it has too many potatoes for me. I was expecting to taste more egg and cheese. I think I'll try it again with less potatoes and maybe some green peppers added to the mix. :D
