Super-Easy Chicken for Mexican Dishes

It's been slow around here, so I thought I'd post one of my Short-Cut Suppers! I like easy and quick, this one works for me!

This makes a mexican chicken 'filling' that can be used for chicken tacos, chicken enchilada, chicken nachos, or just to eat on tostito chips.

One large can of canned chicken, drained, rub between fingers to shred up the chunks as you put it in a skillet.
Add a small jar or about a cup or so of salsa.
Add 4-6 oz of cream cheese
Add a couple spoonfuls of sour cream
OR - in place of sour cream a cream cheese, add a can of condensed cream of chicken soup.

Heat thoroughly and add other spices or ingredients to your taste. Throw in some other cheeses.
Once heated through it's ready to serve with tacos and fixings, or use as filling for enchiladas, serve with chips, etc.

This doesn't have any exotic ingredients and I can throw it together quickly. It gets served a variety of ways.

Canned chicken is a shortcut from cooking and shredding or dicing chicken breasts, and although usually bland, you can spice it up in this recipe. In case of an emergency, we keep a stash of non-perishables, which includes canned chicken. I rotate these items periodically and this recipe allows me to use up the canned chicken, which isn't something I normally use.
