Does anyone have a good chicken or beef pot pie recipe?

I hope so!! The store bought ones have too many veggies for me, I'd love a recipe I could omit the veggies on. :)

I use leftover chicken, beef or turkey. I make 3 cups of medium white sauce and add any leftover gravy to it. My kids like mushrooms, so I add some of those or frozen mixed veges. I always add a bit of pimento, too. You can make the filling as sloppy or thick as suits you. We like it sloppy. I put it in a baking dish and leave a couple inches of head space. Then I mix up 1 cup Bisquick, 1/2 cup milk and a beaten egg and pour that over the filling. Most times I double the topping because we want all the filling covered. Bake in a 400 degree oven for 30 minutes. Use your big kitchen spoon to dip down through the crust into the filling and plate it up. It is easy and comfort food.

govgirl75, we use the one from the Bisquick box also and no store bought ones here.

I guess I'll have to check out the Bisquick box. I love beef pot pies more than chicken for some reason. A really good crust adds to the deliciousness. What kind of base crust do you use? Do you get a frozen crust? I guess I could make it more like a casserole. Drop the filling in a dish and top with the Bisquick mix. Regardless, my mouth is watering :lol:. Thanks for the idea.
