Chocolate Cherry Bars

Post by LucyGoose »

I found this in our local paper just like 2-3 days before the get-together....... :P

2 cups all purpose flour
2 cups quick cooking oats
1 1/2 cups sugar
1 1/4 cup butter, softened
1 can (21 ounce) cherry pie filling
1 teaspoon almond extract
1/2 cup semi-sweet choc chips
1 1/2 teaspoons shortening

In a mixing bowl, combine flour, oats, sugar and butter until crumbly. Set aside 1 1/2 cups for the topping, and then press the reserved crumb mixture into an ungreased 13 X 9 baking pan. Bake at 350 degrees for 15-20 minutes or until edges begin to brown.

In a small bowl, combine the cherry pie filling and extract and carefully spread over crust to make sure it's even on top. Sprinkle with reserved crumb topping mixture. Return to oven and bake another 20-25 minutes longer or until edges and topping are lightly brown.

In a microwave or saucepan, melt chocolate and shortening ans stir till smooth......drizzle over the warm bars.....cool completely. Cut into bars, Enjoy!
