Why, oh why, did I think I needed FIVE zucchini plants?? One died, and that was just fine with me. Still have more zucchini than I can handle. I've made fried zucchini, zucchini casserole, roasted zucchini, zucchini choc chip cookies (look in the recipe forum), gave two to the neighbor, and have 2 big zucchini sitting on the counter and more in the garden.

I just wish the peppers were doing as well as the zucchini this year.

I'm beginning to think it doesn't matter how many zuke plants you have. There always seems to be an overabundance of them every year!! And if you don't harvest them early enough you end up with zukes big enough to use as a baseball bat!! :lol: You could make lots of zuke bread and freeze it to use later in the winter. I like a piece warmed up and have it with my morning tea. :wink:

And thanks to all for the recipes and the link. I've copied every recipe and saved them , so now I'm armed and ready for the zuke invasion!! :lol:
